Is Lmms working well for everyone ?
Is there any other media players available I'm missing ?

2. Serve a stream ? (video/audio)
3. Or both?

I like VLC best, because I can use it as a streaming server and as a client to receive sound/video. I am not sure whether VLC is in the 8.x repo??
Totem (Videos in Mint) can be used as a streaming client also.

On the Raspberry Pi you can run  ffplay  from  ffmpeg.tcz  for basic audio/video playback.
Download a copy and keep it handy: Core book ;)

Recieve only.......Radio to start.......VLC's not on the list

If I could cut and paste into terminal ... Sorta awkwards to type in whole urls.

You can. Highlight the text you want to copy by holding down the left mouse button wile dragging the mouse over the text.
Place the mouse pointer in the terminal window and center click to paste.

Right ! Thank You   :) ............ I'd forgotten that. Most distros now seem to work with the Windows way.
