In simple terms: The BIOS is the link between the motherboard & the operating system bootstrap code, firmware links extra (daughter) boards on the motherboard to the operating system. The operating system accepts input from devices, (keyboard, mouse, tablet, etc), & sends it to programs, which control how the computer reacts.

Closed source proprietary firmware yes. Not just BIOS though, Flash, proprietary graphic drivers, hard drive firmware is all closed source. Would you trust a programmer other than Bill Gates more or less?...and how would you determine as it's still closed source. The BIOS does not prevent the use of other operating systems.
